Y’all we went traveling again (I know, I ask myself if I’ll ever sit still too). Then we came home and my grocery shopping was haphazard. I just put so many veggies in my cart to feel better about my bread induced coma from said travel. Then I didn’t know what to do with all those veggies. So I made a hash. AND GD IT IT WAS DELICIOUS.
2 potatoes, sliced thinly
1 cup of spinach
HOW TO \
Pop a spoonful of coconut oil into a medium hot pan and allow to melt.
Thinly slice those potatoes and put them in the pan. Sprinkle a bit of salt and pepper over them.
While the potatoes are cooking, slice your pepper and throw them in with the potatoes. Allow to cook for about 10 minutes or until the potatoes are browning.
Once potatoes are slight brown, add the spinach and crack the 4 eggs in the four “corners” of your pan. Sprinkle more salt and pepper over them.
Cook until the eggs are as done as you like them. I personally like mine a bit runny so I can “soak up the sunshine” with my veggies.
it seems super simple, and it is. This is one of those “let the ingredients speak for themselves” kind of dishes.
You can, of course, elevate this with hot sauce, roasted red peppers instead of a raw pepper, some parmesan cheese - be creative!
